One thing I love to do is cook for my friends and family. So much so that is has sort of become my job during the holidays. Give me some music, a stocked kitchen, wine, and time and I'm your chef lol. This chicken sandwich was inspired by my favorite item on the Nordtrom Cafe's menu "The Santa Fe". If you have never had a Santa Fe before you are indeed missing out. We're talking seasoned thinly sliced grilled chicken, camerlized onions, sauteed veggies, & more! I love this sandwich so much I was inspired to recreate it at home and have added my own touches to it, making it just right. Not to mention my best friend & lunch buddy moved away so sitting in the cafe at Nordy's just isn't the same anymore :(. This sandwich is so quick, delicious, and easy to make you will want to invite some friends over to try it out. Ingredients:

Olive oil

Boneless Skinless Chicken Breast

Seasoning Salt

Garlic powder

Black pepper

Panini Bread

Butter

Swiss or Provolone Cheese

Italian salad dressing

Red Onion

Red bell pepper

Green bell pepper

Orange bell pepper

 

Directions:

Lighlty grease your grill and preheat at 350º

Season your chicken breast generously with seasoning salt or cajun seasoning, pepper, and garlic powder. 

Cover and refrigerate while you prepare the veggies. 

Slice bell peppers and onions and set aside. 

Add each chicken breast to the grill cook approx 6 mins on each side.

While the chicken cooks heat 2 tablespoons of olive oil in a skillet and add the veggies, cook until tender.

When chicken is fully cooked on both sides, remove from grill (leaving grill on) & let it rest for a few mintues then thinly slice.

Take 2 pieces of panini bread and butter each side. Next build your sandwich.

Add a piece of cheese, thinly sliced chicken, veggies, and a light drizzle of italian salad dressing.

Place the entire sandwich on the grill and cook on each side for about 1-1 1/2 minutes until cheese starts to melt and the sandwich is hot.

Remove from heat and enjoy!
